There are more than three types of volcanoes on Earth. "Volcanoes of the World" by Tom Simkin and Lee Seibert, lists 26 different types. For the sake of simplicity, I have chosen to focus on the three listed below.
The form of a volcano is determined by the composition of the erupting magma and the type of erupted products. Their shapes are determined to a large degree by the explosivity of the eruptions, and to the abundance of water and its degree of interaction with magma.
